Juicy Roasted Chicken

 As a girl raised in the south of Indiana, I often turn my nose up at some of the fried foods that are popular here. It’s not even fair that these items aren’t healthier than most of their ingredients. But after reading about this delicious, savory breakfast treat from Southwestern favorites (and seeing pics of how they looked!), I knew we had to try it. And when mom suggested that we roast chicken instead, all signs said she was kidding me! (But, hey, who’s counting anyway!)

But in all honesty, I thought it would be great! Here’s what happened once we tried it:

The Recipe



When you make a meal like this, remember that it is best served a day or two before serving it to your family members and guests because it can last up to two days in your fridge if stored properly. Once cooked and cooled, then simply store in an airtight container. If you want to keep it cold overnight, place your freshly baked baguette on top and cover with foil overnight. When ready, just pop it into the oven for 20 minutes.

Tips for Making Great-Looking Roasts

To create really appealing roasts, the food needs to be moist. For instance, don’t brown the chicken excessively in the baking process; use a heavy pan and sear all sides until golden brown. Avoid having too much fat at one time because it may make the chickens stick to themselves while making them crispy.

Once the poultry has rested by gently flipping them over halfway through to let any juices run out of them and remove excess fat. The best way to do this is to cut off about 1/2 inch worth of meat just prior to roasting. You can also add another ½ inch of chicken in later on during preheating. Then, set it aside to rest before cooking.

Now, you have everything you need to get started: the bread (I like to use whole wheat), oil, salt, pepper, garlic powder, and fresh herbs – just pick whatever fits your taste. While this recipe calls for three small pieces, if you have more than three leftovers, use the entire batch to make larger quantities. In fact, freeze a portion of this as well to give you extra servings one night and still be able to eat this next day! Don’t forget to season thoroughly after pre-baking. You can find these toppings right now in grocery stores here and here. If you have a large batch of homemade bread, just tear it into bite sizes and refrigerate. Simply pull the roll apart to toast a bun for each of your roasted chicken dinners.

I can definitely tell you that it depends on who is eating this. My personal preference is for everyone to enjoy something, so I recommend topping this up with shredded cheddar cheese. That way, you can enjoy those tender meats without adding any flavor to it yourself. Another idea is serving the turkey with sliced avocado alongside a side salad like a tuna salad. Or, serve it with other favorite dipping sauces like ranch dressing or honey mustard. Whatever makes your tastebuds sing!

How Often Should You Make It?

For beginners, a single 5 lb chicken breast is about 3 lbs per person per meal. However, it doesn’t matter as long as everyone enjoys something different every time. We all learn differently with age so feel free to experiment with different amounts of your chicken. You can even put leftover grilled chicken breasts on your own salads to make sandwiches. Just feel free to add some pineapple if you so desire.
